Glass Noodle Vermicelli Salad “Harusame Salad”

People call this salad as Chinese salad as I guess the glass noodle is from China, and they think sesame oil dressing is Chinese thing. There are a lot of things influenced by China in Japan for sure. This salad is healthy but fulfilling, and tastes refreshing. Also you can keep it to 2-3 days and even it tastes better next day.

Ingredients
80g of glass noodle or called as bean noodle, glass noodle, “Harusame”(meaning spring rain) in Japanese.
70g of cucumber
70g of ham (chicken, turkey, or pork… any kind should be ok) , or canned tuna
1 egg for shredded egg *Please refer to this recipe

<for Dressing>
2.5 tablespoon of vinegar
2 tablespoon of soy sauce
1 tablespoon of vegetable oil (*for preparation of glass noodle)
1.5 tablespoon of vegetable oil
1.5 tablespoon of sesame oil
1 tablespoon of brown sugar

Instruction
1. Cut cucumber into the shape and length of match sticks. Sprinkle salt and mix with hand. Leave it for 5-10 mins, then squeeze to get rid of water.
2. Boil water. Put glass noodle into a bowl, and pour the boiled water to cover the noodle. Leave it for 2-3 mins. Get rid of the water through strainer. Place the noodle on a chopping board, and roughly cut in 4 to make each noodle a little shorter so that it is easier to eat. Put in a bowl and add *1 tablespoon of vegetable oil and mix so that the noodles don’t get stuck each other.
3. Cut ham similar size as cucumber.
4. Add cucumber and ham to the noodle.
5. Mix all the ingredients for dressing, and pour into the bowl of the noodle, cucumber and ham and mix.
6. Cover and keep in a fridge until serving. It tastes better if you leave at least 15 mins.
7. When you serve, add shredded egg.
