Apple Crumb Coffee Cake

I have been wanting a better coffee cake recipe for a very long time as a coffee cake is my favorite and you can top any fruit you like. If you want to use softer juicier fruits, I suggest not to add the fruit in the batter, and simple add it on top only.

Ingredients (for 8×8 baking pan)
<Topping>
3⁄4cup all-purpose flour
1⁄3cup packed brown sugar
1⁄3cup butter, melted
1/2 tablespoon of ground cinnamon *optional

<Cake>
160g of flour
1/2 teaspoon of baking powder
1/2 teaspoon of baking soda
1/4 teaspoon of salt
90g of butter, softened
125g of granulated sugar
2 eggs, room temperature, whisk in a small bowl
125 g of sour cream (full fat), room temperature
1 apple
1/4 teaspoon of ground cinnamon

Instruction
1. Make crumb topping. In a bowl, mix brown sugar and cinnamon. Add melted butter and mix with a fork. Then add flour and mix until mixture is in fine crumbs.
2. Pre-heat oven at 350F. (180C) Place a parchment paper in a baking pan.
3. In a bowl, add flour, baking powder, baking soda and salt. Whisk well. (Or sift.)
4. In a large bowl, add butter and mix with a hand mixer to make sure butter is soft. Add half of the sugar and mix well until it looks paler.When it becomes pale, it is a sign the mixture contains air inside.
5. Add the remaining of sugar and mix well until it is pale, smooth and soft.
6. Add whisked eggs little by little using a tablespoon and mix well. Then add sour cream and mix.
7. Add the mixture of flour and the other dry ingredients, and mix at the low speed. Once all combined, turn the hand mixer off.
8. Chop an apple. I usually cut in half then quarter first so that you get 8 pieces. remove the core, and slice in about 5mm. Sprinkle cinnamon powder and mix lightly, then add the half of apple in the batter, and mix with a spatula lightly.
9. Spread the batter into the baking pan. With a knife or spatula, flat the top surface evenly. Then top with the remaining apple slices. Finally spread crumb mixture.
10. Bake for about 50-60 mins or until it is baked. Check the inside with a toothpick.
