Flaky Crispy Apple Strudel with Filo

Using filo sheet and panko bread crumbs is a huge help to get the right texture of apple strudel, light, flaky and crispy outside yet moist inside. Yes, still this is not a quick job to prepare, but it is just so worth to do!

Ingredients
350-400g of apple, cored and cut in about 1-1.5cm slices
1 tablespoon of granulated sugar
1/2 teaspoon of lemon zest
1 teaspoon of lemon juice
1/8-1/4 teaspoon of cinnamon
1/8 teaspoon of ground ginger (optional)
1/8 teaspoon of salt
2 tablespoon of raisins
2 tablespoons of panko bread crumbs
50g of melted salted butter
6 sheets of filo sheets
vegetable oil
5 teaspoons of granulated sugar

Instruction
1. Toss apple slices, granlated sugar, lemon zest and juice, cinnamon, ginger and 1/8 of salt in a bowl. Cover with wrap and microwave about 1 min. Take it out and mix with a spoon and microwave another 1 min. Leave it with a wrap for 3 mins, then move to a colander in the bowl and let drain for 5-10 mins. Keep this liquid.
2. Transfer the apple mixture back to the bowl, and add raisin and panko bread crumb and mix lightly.
3. Preheat the oven at 375F.
4. Set parchment paper on a oven tray. Lightly spray or spread vegetable oil on the paper, and place the first filo sheet with a long side parallel to the edge of the counter you are facing. (landscape)
5. With hand or a brush, thinly spread melted butter on a filo sheet, and a light teaspoon of sugar. Then place the second filo sheet. Repeat this until you finish all 6 sheets.
6. Arrange the apple mixture, leaving about 5cm at the bottom and sides.
7. Fold the sides of filo over the filling first, then fold over the bottom. Brush folded area with apple liquid which should work as a glue.
8. Fold the top edge of filo sheets over the filling, making sure to have overlapping bottom by 2-3cm. Brush the apple liquid where the sheets overlap, the sides and the bottom, and press firmly to seal.
9. Lightly brush the top and sides of strudel with the remaining apple juice, and sprinkle some granulated sugar on the top.
10. Bake strudel until it gets golden brown about for 30 mins.
11. After baked, move the strudel to a cutting board, and let it cool about for 30 mins.
