Homemade Lemon Honey Ginger Syrup

Homemade ginger syrup tastes so much better! If you want to make it spicier, add more ginger and leave the mixture of ginger and sugar for a longer time like two hours. You can also add some black pepper, chili and some spices such as a stick of cinnamon or a couple of star anise.

Ingredients
150g of ginger
200g of brown sugar
1 cup of water
1/2 lemon
2 tablespoons of honey

Instruction
1. Slice ginger in 2mm.
2. Mix slices of ginger and brown sugar and leave it for 1 hour. The water from ginger is coming out and melting the brown sugar. It will become ginger in brown liquid. More you leave, spicier it becomes.
3. Add 1 cup of water into 2, and cook at low to medium heat for 20 mins.
4. Turn off the heat, and add the juice of a half lemon and honey.
5. Using a strainer, get rid of ginger and keep the syrup in a clean bottle. You can keep this for 2 weeks.
